A few years ago, I did a search for a Baked Bean recipe on the BBQ Forum. There were several that came up but Danny Gaulden’s Baked Beans looked like a winner. Over the year’s i’ve tweaked the recipe to my own liking and in my opinion, there is no greater recipe out there. Give it a try at your next Pig Roast or picnic and I guarentee you’ll have a happy crowd.
2 x 117 ounce cans Bush’s “baked beans”
Place in collander and allow all the “juice” to drain
60 slices Hickory Smoked Bacon
8 small onion — chopped
8 small red bell pepper — chopped
8 small green bell pepper — chopped
2.5 cups BBQ Sauce
1.5 cups dark brown sugar
Place beans in a collander and drain liquid and discard. Pour drained beans into 3 aluminum hotel pans (or similar). In a skillet, fry 30 thick slices of HICKORY smoked bacon well done, pat dry. Fry 30 more slices of bacon till medium done, and set aside. Drain all but 2 or 3 tablespoons of bacon grease out of skillet and discard. Saute onions, green and red bell peppers for 3 or 4 minutes in hot bacon grease. Pour sauteed onions, peppers, and bacon grease into beans. In a cup, mix your favorite BBQ sauce with the dark brown sugar and pour into beans. Crumble or dice the cold bacon with a good chef’s knife, and stir into beans. Place medium done bacon slices on top of beans and place on smoker (or bake in oven) at350 degrees for about 90 minutes, till thick and rich.
